The biggest thing to remember about using GI is that what counts is the whole meal - not just the individual elements.
What that means is that you can have some high GI items (cereal, fruit) as long as they are mixed with lower GI items (e.g. unsweetened yogurt).
If you're doing this, look for cereals with low added sugar (weetabix, rice crispies etc) and avoid the sugar coated chocolate bombs type.
Other possibilities include eggs, or muesli (mixed with dried fruit and nuts it gives you a whole host of essential nutrients).
Atkins is based on some sound theories, but like most of these things the "commercial" is taken to an extreme. A more sensible way to use the science behind Atkins is to reduce processed carbs but eat plenty of fresh fruit and veg alongside quality protein (meat, fish, chicken, nuts, beans).

I do the GI diet myself and I have chopped fruit with plain yogurt, oats and a sprinkling of nuts (sunflower seeds and flaked almonds). It's a yummy addition to breakfast!
I also sometimes have scrambled tofu with veggies which is great for the morning. I would also recommend getting a Low GI cookbook as there are recipes for low gi pancakes, etc.

Other good ideas include fruit smoothies (made w/lo fat yogurt), and cereals like special k and all bran.
